Great on a cold winter day, very filling. Good served with crackers or hot corn bread. Ingredients:
1 pound ground round |
2 t. olive oil |
1 chopped onion |
garlic (as much as you like) |
1 can whole kernal sweet corn |
1 can white corn |
1 large can of diced or stewed tomatoes (not sauce) |
1 can green beans |
salt and pepper |
add your favorite.... |
1 or 2 diced, peeled potatoes or |
1 cup macaroni or |
barley 1/2 cup (uncooked) |
Directions:
1. Brown meat in olive oil, then add onions and garlic. 2. Add salt and pepper. 3. Add canned veggies; do not drain. 4. Add macaroni, potatoes or barley. 5. Stir well, bring to a simmer, stir well again. 6. Add water if more liquid is needed. 7. Simmer on stove for 1 hour or until veggies are done. 8. A very adaptable recipe, if you don't care for green beans add your preference, green peas, green lima beans, etc. |
