Beef Vegetable Herb Salad |

Delicious steak combined with crunchy veggies make this a perfect meal! Ingredients:
1 bunch broccoli, stem peeled |
1 red pepper, diced |
half red onion, diced |
half english cucumber, diced |
3 tbsp each chopped fresh chives and italian parsley |
2 tbsp chopped fresh oregano |
1 large clove garlic, minced |
1/2 cup extra virgin olive oil |
4 tbsp red wine vinegar |
1/4 tsp each salt and pepper, approximately |
3 strip loin grilling beef steaks (about 12 oz. each) |
2 tbsp chopped fresh dill |
6 boston lettuce leaves |
Directions:
1. Chop broccoli into bite-size pieces and place in large bowl. 2. Add pepper, onion and cucumber. 3. Stir together chives, parsley, oregano, garlic, oil, vinegar, the salt and pepper in another bowl. 4. Place steaks in shallow glass dish and spoon over 1/4 cup of the dressing and turn steaks to coat. 5. Let stand for 15 minutes, turning once. 6. Drizzle remaining dressing over broccoli mixture and toss gently. 7. Season with salt and pepper to taste; set aside. 8. Place steaks on greased grill over medium-high heat and grill for about 6 minutes, turning once or until medium. 9. Remove to cutting board and thinly slice. 10. Add sliced steak to broccoli mixture with dill. 11. Toss to combine. 12. Place 1 Boston leaf on each plate and top with salad mixture. |
