Beef Vegetable Barley Soup |

Light soup for lunch with beef, carrots, potatoes, and barley. Ingredients:
5 cups water |
1/2 pound lean beef, chopped |
1 cup carrots, chopped |
1 cup potato, chopped |
1/4 cup barley |
1/4 cup onion, chopped |
1 cup beef boullion |
1/4 teaspoon salt |
1/4 teaspoon pepper |
Directions:
1. Brown beef in fat free cooking spray in hot pan. Put in pot with cups water, 1 cup beef broth, salt, pepper, onion and barley. Simmer for 1 hour. Add carrots and potato and simmer for 20 minutes more. |
