Southern Living Ingredients:
1 cup dry sherry |
1 cup light soy sauce |
5 green onions, finely chopped |
1 (5 -6 lb) beef tenderloin, trimmed |
2 tablespoons olive oil |
rosemary sprig, garnish |
Directions:
1. In a bowl, stir the first 3 ingredients together. 2. Rub tenderloin with olive oil, and place on a wire rack in a roasting pan. 3. Pour sherry mixture into pan. 4. Bake in a preheated 450° oven for 45-50 mintues, basting occasionally, or until a meat thermometer inserted into the thickest portion reads 140° for medium rare (160° for medium). 5. Remove from oven, cover tenderloin loosely with foil; let stand 15 minutes before slicing. 6. Garnish, if desired; serve with pan drippings. |
