BEEF STUFFED ZUCCHINI This recipe came from an estate sale. I obtained it when I purchased the family collection from the Nichols Estate in Terrell, Texas in 1994. Ingredients:
1-1/2 pounds lean ground beef cooked |
1 white onion chopped |
1 green bell pepper chopped |
1/2 teaspoon ground jalapeno pepper |
1-1/4 cups soft bread crumbs |
1 egg beaten |
1 tablespoon parsley |
1 teaspoon basil |
1 teaspoon italian seasoning |
1 teaspoon salt |
16 ounces tomato sauce |
2 tomatoes coarsely chopped |
5 medium zucchini |
2 cups shredded mozzarella cheese |
Directions:
1. Combine all ingredients except zucchini and cheese then mix well. 2. Halve zucchini lengthwise and scoop out seeds. 3. Fill with meat mixture then place in baking dish and bake uncovered at 375 for 45 minutes. 4. During last 5 minutes sprinkle with cheese and return to oven until cheese is melted. |
