I use bison for less fat. The poorman's version is with ground meat, and we actually prefer this! Serve on hot noodles with a green salad on the side. Ingredients:
1/2 lb mushrooms |
3 tbsp extra virgin olive oil |
2 cups onions, chopped |
1 lb bison (sliced or ground) |
2 tbsp flour |
360 g (1 cup) consume |
1 tbsp tomato paste |
1 tsp worcestershire sauce |
1 tsp dijon mustard |
1/4 tsp salt |
1/4 tsp black pepper |
1 cup sour cream |
Directions:
1. Heat olive oil in a large skillet. Brown onions and meat. Add sauteed mushrooms. 2. Add remaining ingredients except the sour cream and simmer on low for 15-20 minutes. (Freeze at this point.) 3. Add sour cream and heat, but do not let boil. 4. Serve with noodle or rice. Sprinkle chopped parsley on top. |
