Oriental Beef Stir Fry with heart healthy brown rice. Hint - use extra water or broth when cooking the brown rice to ensure it is not hard or crunchy. Ingredients:
2 tbsp smart balance vegetable oil |
1 lb lean beef - sliced thin |
2 1/2 cups broccoli |
2/3 lb asparagus |
3 medium carrots - sliced thin |
1/2 cup peas - frozen |
3/4 cup beef broth |
1/4 cup soy sauce |
1/2 tsp ground ginger |
2 tbsp corn starch - with a little water |
3 cups brown rice |
Directions:
1. Use 1 TBSP oil first to brown the beef. Remove beef and set aside - keep warm. 2. Add remaining oil and saute the vegetables until just crisp. 3. Add broth and soy sauce. Experement with other oriental sauces for different flavors. 4. Simmer for 5 - 10 minutes. Add the corn starch mixture slowly while stiring constantly. 5. Simmer an additional 5 minutes until thickened. 6. Serve with cooked brown rice. 7. Be sure to eat your Oriental Stir Fry with Chop Sticks for a real Asian delite. |
