Very tasty and easy. Excellent use of left over pot roast or grilled steaks. Ingredients:
3 t olive oil |
1 3/4 lbs beef tenderloin - 1 in cubes |
1 lg onion - chopped |
1 large carrot - chopped |
2 cloves garlic - chopped |
1 t paprika |
2 t ground cumin |
1 1/2 t ground cinnamon |
2 c beef broth |
1 15 oz can garbonzo beans |
1/2 golden raisins |
1/2 c fresh cilantro - chopped |
Directions:
1. Heat 2 T oil in a large heavy Skillit. Sprinkle beef with a little salt and pepper and brown on all sides. Transfer to plate and set aside. 2. Add remaining 1 T oil to pot and onion, carrot and garlic. Cook till soft, stirring frequently - about 10 min. 3. Add spices, stir one minute till well incorporated 4. Add beef broth, garbonzo beans and raisins - bring to boil. Simmer untill juices thicken a bit - about 5 min. 5. Add beef and cilantro to pot and stir till heated through. 6. Great served over couscous |
