Comforting beef stew done in the oven. Ingredients:
11/2lbs 1 cubes beef chuck |
1/4c. all purpose floue |
11/2t. vegetable oil |
2 cans(14 oz.) beef broth |
1 lg. onio,sliced |
1t minced garlic |
3lbs. small sweet potatoes |
1lb. each carrots and parsnips |
3 ribs celery |
1t butter |
1/4t salt |
Directions:
1. Position racks to divide oven in thirds. Preheat to 325 2. Coat beef with flour. Heat oil in dutch oven over medium-high heat. Add beef and brown. Add broth,onion and garlic;bring to a boil. Cover tightly and place stew on one oven rack,potatoes on the other. Bake 30 mins 3. Cut carrots,parsnips and celery into 1 lenths;stir into stew. Cover and bake 45 mins. or till tender when pierced. 4. Peel potatoes and mash with butter and salt. . 5. To serve: 6. Heat oven to 400. Skim off fat from stew,then spoopn into a shallow 31/2Qt. baking dish;spread potatoes over the top. Bake 50 mins or until bubbly around edges and hot in center |
