This is a wonderful 36 hour slow cooked classic beef stew. If you are willing to spend the time on a weekend to make this, you can eat well for most of the week. The best thing is all the indigents come with a surprisingly low price tag. Ingredients:
2 lb beef stew meat |
2 large potatoes |
1 large yellow onion |
1 bag frozen snow peas |
4 large carrots |
2 medium sized parsnips |
1 medium tomato |
2 cups red wine |
1/2 cup port |
1/3 cup bourbon |
2 to 3 cups stock |
to taste |
garlic |
pepper |
rosemary |
1 bay leaf |
oregano |
thyme |
chili powder |
parsley flakes |
1 package lawry’s beef stew seasoning |
worcestershire sauce |
olive oil |
balsamic vinegar |
Directions:
1. Run Crock Pot on low for full cooking duration (36 hours), Stir as needed (about once an hour). Additional stock can be used in replacement of Spirits. 2. Day 1: (Morning) 3. Get 2 packages of Stew meat (can get top round and cut into 1in cube pieces) 4. Heat 3 tbsp vegetable oil on high in large pan 5. brown stew meat (should be extremely rare in the middle) 6. let meat drain (reserve drippings) 7. Heat up 3 cups beef Stock 8. add 1 cup stock to crock pot 9. Pour 1 cup Red Wine into pan cooked from meat (deglaze pan) 10. Add 1/2 Cup Port and 1/3 Cup Bourbon to Pan 11. Burn Alcohol away 12. Pour liquor into Crock pot 13. Add Meat to Crock pot 14. Add Olive oil to same pan 15. Add 1 1/2 tbsp garlic, brown 16. Finely chop 3/4 onion, add to pan 17. Sauté onions 18. add 1 cup heated stock to Onion 19. add de-greased meat juices to pan 20. Sauté Onions until translucent and liquid is barely visible 21. Add Onions to Crock pot 22. In Crock pot add to Taste: 23. Balsamic Vinegar 24. Pepper 25. Rosemary 26. 1 Bay Leaf 27. Oregano 28. Thyme 29. Chili Powder 30. Parsley Flakes 31. 1 Package Lawry’s Beef Stew Seasoning 32. Worcestershire Sauce 33. Peel and cube Parsnips and 1/2 large potato, add to crock pot 34. very thinly slice 1/2 potato and add to crock pot (will help thicken) 35. (Evening) 36. Add remaining potato cubed (1/2 potato) 37. Add additional stock if needed 38. peel, slice, and add 2 large carrots to crock pot 39. Day 2: (Next Morning) 40. Skim top layer of crock pot 41. Peel and add remaining carrots 42. Slice into semi-large slices remaining onion, add to crock pot 43. Add 1 medium Tomato 44. De-thaw snow peas, rinse peas with hot water, drain, add to crock pot 45. (30mins before serve) 46. Shouldn’t require thickening, but add thickener if needed 47. Serve with French or Sourdough Baguette |
