Stew like my dad used to make! Ingredients:
1 1/2 lbs stewing beef |
2 tbls flour |
3 cups tomato juice |
1/2 cup chicken stock |
2 tsp kitchen bouquet (can subsitute 2 beef oxo cubes) |
2 tbls oil |
1/2 tsp basil flakes |
1/2 tsp oregano flakes |
2 bay leaves |
2 finely chopped garlic cloves |
2 cups carrots |
2 cups potatoes |
1/2 cup diced onion |
1 cup celery |
salt |
pepper |
Directions:
1. Put the flour In a plastic bag and coat stewing beef pieces. Brown in oil. Add tomato juice, onions, garlic, bayleaf, 2 tsp kitchen bouquet, basil and oregano and bring to a boil. reduce heat , cover and simmer for 1 & 1/2 hours. Add carrots, potatoes and celery (cut to your preferred size) and simmer another 1/2 hour. 2. Serve with crusty bread for an excellent winter dish. 3. I cook this on the stovetop in a 4 quart skillet with lid. |
