This beef stew is really delicious. I found it and made a few alterations. This is really easy and goes great with warm homemade bread or Italian bread. Ingredients:
2 lbs. cubed stew beef |
3 tbs. vegetable oil |
6 beef boullion cubes crushed(more or less to taste) |
4 cups water |
1 tsp. dried rosemary |
1 tsp. dried parsley |
1 tsp. black pepper |
1 tsp. garlic powder |
3 large potatoes, peeled and cubed |
4 carrots, cut into 1 inch pieces |
4 stalks celery, cut into 1 inch pieces |
1 large onion, chopped |
5 tsp. corn starch (more or less depending on desired thickness) |
5 tsp. cold water |
Directions:
1. In large pot or dutch oven cook beef in oil over medium heat with 1/2 tsp. pepper and garlic powder until brown. 2. Dissolve boullion cubes in water and pour into pot. 3. Stir in rosemary, parsley and rest of pepper. 4. Bring to a boil, then reduce heat, cover and simmer 1 hour. 5. Then stir in potatoes, carrots, celery and onion. 6. Dissolve corn starch in cold water and stir into stew. 7. Cover and simmer another hour. 8. Enjoy! |
