Warm up your winter day by making hearty beef stew. Ingredients:
1 lb stewing beef |
10 baby carrots, chopped in quarters |
1/2 large onion, cut into wedges |
5 red potatoes, chopped into quarters |
1 (14 1/2 ounce) can tomatoes, chopped and drained |
1 tablespoon garlic, chopped |
1 tablespoon olive oil |
1 teaspoon cornstarch |
1/2 teaspoon paprika |
1/2 teaspoon salt |
1/2 teaspoon pepper |
1/2 cup beef stock |
1 cup water |
1 bay leaf |
1/2 teaspoon celery seed |
Directions:
1. Chop Stew beef into small 1 cubes and brown in a pan with 1 tbs of olive oil. While beef is browning add onion, carrots, garlic, paprika, salt & pepper. 2. When browned, add beef stock and celery seed and heat on medium flame for 10 minutes. Add water and heat again for 10 minutes. 3. Transfer to crock pot and cook for 4 hours on high or 8 hours on low. About 30 minutes before serving, add 1 tsp of cornstarch to 1/4 cup of cold water, and add mixture to the crock pot. Stir well and let it continue to cook for 30 minutes. This should thicken the broth. You might add more for a thicker stew, depending on your tastes. |
