Every cook needs a good beef stew recipe for company. This one is hearty stew that even improves with standing. Ingredients:
2 lbs beef chuck or 2 lbs round steaks, cut into chunks |
2 tablespoons oil |
1 teaspoon salt |
1/2 teaspoon white pepper |
1 cup beef broth and water |
1 bay leaf, crushed |
2 -4 whole cloves |
2 teaspoons dried thyme |
4 carrots, peeled and sliced |
6 potatoes, peeled |
2 onions, sliced |
2 stalks celery, sliced |
1 / stalk broccoli spear |
1 green pepper, sliced |
Directions:
1. In dutch oven brown meat, a little at a time. Discard excess fat. Add salt and pepper. 2. Stir in beef broth and water. Bring to a boil. Add bay leaf and cloves. 3. Reduce heat. Simmer, covered until meat is almost tender, for about 1 1/4 hours. Add thyme. 4. Add vegetables. Cook for another 20-30 minute until vegetables are tender crisp and meat tests done. 5. Serve piping hot. |
