Beef Shank And Grape Stew |

This is a recipe I obtained from an estate sale a few years back. I have not tried it but think it sounds very interesting and very tasty. Enjoy Ingredients:
4 pounds beef shank |
1/3 cup flour |
1/4 cup vegetable oil |
1 large white onion coarsely chopped |
4 medium carrots diced |
3 stalks celery diced |
1 clove garlic minced |
16 ounce can diced tomatoes |
1/2 cup dry white wine |
1 teaspoon salt |
1/2 teaspoon dry thyme crushed |
1/4 teaspoon freshly ground black pepper |
2 cups seedless grapes |
2 tablespoons lemon juice |
2 tablespoons minced parsley |
Directions:
1. Shake shanks and flour in a clean dry bag until shanks are lightly coated. 2. Brown shanks in oil over medium high heat a few at a time then remove and set aside. 3. Add onions, carrots, celery and garlic then cook until onion is tender. 4. Return shanks to pan then add tomatoes, wine, salt, thyme and pepper. 5. Bring to a boil then reduce heat and cover then simmer 2 hours. 6. Stir in grapes and lemon juice and cook just until grapes are heated. 7. Sprinkle with parsley and serve. |
