Beef & Salsa Rice Salad

Ingredients:
1 lb cooked roast beef or 1 lb ground beef, cut into small chunks
1 cup mild salsa
1 green bell pepper, trimmed and chopped
4 cups cooked rice or 4 cups cooked short pasta
salt and pepper
1/2 lb cheddar cheese, diced
Directions:
1. In bowl, combine all ingredients with cheddar cheese.
2. Season to taste with salt and pepper.
3. Place in airtight container and chill until ready to serve.
4. Serve cold or warm.
