What I do with extra ground beef. Easy homemade salami. No preservatives or artifical flavors. Great on crackers or sandwiches. Ingredients:
4 lbs ground hamburger beef |
1 t garlic powder |
1 t onion powder |
1 t ground cumin |
2 t chile powder |
1 t crushed dry red pepper |
5 t salt |
2 t mustard seed |
1 t dry oregano leaves |
1 t dry basil leaves |
1 t whole peppercorns |
2/3 cup parmesan cheese |
Directions:
1. Mix all the dry ingredients thoroughly. 2. Break up 1 pound of the meat into the bottom of a large glass bowl. 3. Sprinkle a quarter of the dry seasoning evenly over meat. 4. Continue by quarters with balance of meat and spices. 5. Now, mix by hand unti well mixed. 6. After mixing, press meat mixture down flat in bowl, cover with plastic wrap and place in refrigerator for about 12 hours. 7. Remove from refridgerator. 8. Divide meat into four parts. 9. Form each into a roll 8 inches long. 10. Wrap each roll into a 10-by-12-inch piece of cheese cloth. 11. Twist and secure each end with a bread tie. 12. Place rolls on a rack over a shallow pan to catch drippings. 13. Bake in a 225-degree oven for 4 hours. 14. Allow rolls to cool and wrap in paper (don't put in a plastic bag or salami will sweat). |
