Beef & Rice Soup (Sierra Leone) |

Ingredients:
1 lb beef, cubed |
2 (14 ounce) cans low sodium beef broth |
1 -2 cup water |
4 medium chilies, finely chopped |
1 medium onion, finely chopped |
2 medium tomatoes, diced |
0.5 (6 ounce) can tomato paste |
1/2 teaspoon thyme |
salt and pepper, to taste |
2 cups cooked rice |
Directions:
1. Bring beef stock & water to a boil then add the beef. Lower heat & simmer 20 minutes. 2. Add remaning ingredients except rice. Cover and continue to simmer 25 more minutes. 3. Stir in the rice before serving. (You may need to add more water). |
