Quick, easy and tasty. Ingredients:
6 (8 -10 inch) flour tortillas, warmed |
1 lb ground beef |
1/2 medium onion, chopped |
1 (14 1/2 ounce) diced tomatoes with green chilies |
1 (15 ounce) can black beans |
1 1/2 cups cheddar cheese, shredded |
Directions:
1. Warm tortillas in foil in oven set to 350 for 10 minutes. 2. Cook meat and onion in skillet over medium heat until meat is browned. 3. Drain and season with salt and pepper. 4. Add undrained Rotel tomatoes and beans,. 5. Cook over medium heat 5 - 7 minutes, stirring occasionally, or until liquid is evaporated. 6. Fill each tortilla with meat mixture, cheese and sliced green onions, if desired. 7. Roll up and top with favorite toppings. |
