This recipe came from an estate sale. I obtained it when I purchased the family collection from the Stahl Estate in Tulsa, Oklahoma in 1988. Notation on card indicates Uncle Charlie fixed family breakfasts for over 40 years. Read more . This was one of his specialties. I made this for a brunch I hosted in 2001. It was a huge hit. Ingredients:
1 pound ground beef cooked and drained |
2 lightly beaten eggs |
1/2 cup milk |
2 tablespoons fresh chives |
1 can cream of mushroom soup |
3/4 cup shredded monterey jack cheese |
1/4 teaspoon creole seasoning |
pie shell |
Directions:
1. Combine all ingredients except pie crust in large bowl then stir well and set aside. 2. Prick pie shell and bake 8 minutes at 450 then remove pie shell from oven. 3. Pour quiche mix into shell and bake at 350 for 1 hour. |
