Fabulous, quick and hearty soup! It's ready in no time and is so tasty. I think I found this in a Light & Tasty Magazine a few years back, but not sure. For the frozen vegetables in garlic sauce, I use Green Giant, which comes in a bigger bag..I use the whole thing. Hope you enjoy! Ingredients:
1 lb lean ground beef |
2 (14 1/2 ounce) cans beef broth |
1 (16 ounce) package frozen vegetables and pasta (in garlic sauce) |
1 1/2 cups tomato juice |
1 (14 1/2 ounce) can diced tomatoes, undrained |
2 teaspoons italian seasoning |
Directions:
1. In a large saucepan, cook beef over medium heat until no longer pink; drain. 2. Add the broth, frozen pasta with vegetables, tomato juice, tomatoes and Italian seasoning, bring to a boil. 3. Reduce heat, cover and simmer for 10 minutes or until vegetables are tender. 4. Serve with parmesan cheese if desired. |
