Ground beef and rice star in this hearty casserole. It's prepared on the stovetop, so dinner's ready in no time.—Elma Katainen, Menahga, Minnesota Ingredients:
1 pound ground beef |
1 medium onion, chopped |
1/2 cup chopped green pepper |
1/2 teaspoon salt |
pinch pepper |
1-1/2 cups uncooked instant rice |
1 can (14-1/2 ounces) stewed tomatoes |
1 can (8 ounces) tomato sauce |
1-1/2 cups hot water |
1 teaspoon prepared mustard |
Directions:
1. In a skillet, cook beef over medium heat until no longer pink; drain. Add onion, green pepper, salt and pepper; cook and stir over medium heat until vegetables are tender. Add remaining ingredients; bring to a boil. Reduce heat; cover and simmer for 10 minutes. Yield: 4 servings. |
