Beef Mushroom Barley Soup |

This is a delious comfort food soup. Good for a snowy Montana day. Ingredients:
1/2 lb ground beef |
2 cups sliced fresh mushrooms |
4 garlic cloves, minced |
2 tablespoons butter |
4 (14 1/2 ounce) cans beef broth |
2/3 cup medium pearl barley |
2 tablespoons soy sauce |
2 medium carrots, sliced |
1 teaspoon dill weed |
salt and pepper |
Directions:
1. In medium saucepan, brown ground beef. Remove to a plate. In same pan, saute mushrooms and garlic in butter for 5 minutes (med-low heat). Stir in the browned ground beef, broth, barley and soy sauce. Bring to a boil. Reduce heat; cover and simmer for 20 minutes. 2. Add the carrot, dill, salt and pepper (if desired). Cover and simmer for 15 more minutes, or until barley and carrot are tender. |
