For you Cubs fans.... Beef Medallions in Beer Sauce is from the cookbook Harry helped promote called Now You're Cookin' with Bud . This was a favorite dish of Harry's and will be offered at his restaurant. Ingredients:
8 beef medallions |
1 quart beef stock |
1 bunch green onion, diced |
1 teaspoon fresh garlic, minced |
16 ounces budweiser beer |
1/2 lb sliced mushrooms |
1 cup fresh tomato, diced |
Directions:
1. Saute medallions to rare. 2. Add 6 ounces of Budweiser, lower to medium heat for 2 minutes. 3. Add mushrooms, green onions and garlic and saute until tender. 4. Add beef stock and tomatoes, cook to preferred temperature. 5. Add remaining 10 ounces of Budweiser and lightly thicken with a roux. 6. Chabear01 Basic Roux is a good basic roux recipe the extra can be frozen. |
