Beef Liver Pate With Truffle Oil |

I had calf liver with fried onions and bacon the other night in a restaurant and I could not finish the large portion. The pate came out delicious Serve with cocktail bread, crackers etc. Normally I don't eat a lot of liver, only when I get the craving, but any leftovers make a wonderful pate! Read more ! Ingredients:
based on leftover, with precooked, liver, bacon and onions; but of course may be cooked esp for making pate |
1 pkg calves beef liver cooked ( fried or broiled ) to your liking, enough for 2 servings |
2 strips bacon fried ( optional ) |
1 med onion sliced and fried till soft and golden |
1 tbs olive oil |
2 tsp dry red wine to taste |
salt and pepper to taste |
2 tsp black truffle oil or to taste |
Directions:
1. In a food processor with metal blade, place cut up cooked liver, fried bacon and onion and process to a desired consistency. 2. Add olive oil to make for a softer creamier consistency 3. Flavor with salt and pepper to taste, a touch of red wine. 4. Serve as is or chilled 5. However just before serving, stir in the truffle oil to taste. 6. Serve pate with bread, crackers,french bread slices etc. 7. Should serve 4 to 6 |
