A quick and hearty soup which can be prepared in a flash! Ingredients:
1 lb ground beef |
1 medium onion, chopped |
1 garlic clove, finely chopped |
1 cup mushroom, chopped |
28 ounces tomatoes |
1 stalk celery, sliced |
1 large carrot, sliced |
1 cup dry green lentils |
3 cups beef stock |
1/4 cup red wine |
1 bay leaf |
1 tablespoon parsley |
1 teaspoon salt |
1/4 teaspoon pepper |
Directions:
1. Cook and stir ground beef, onion and garlic in a large pot until beef is browned. Drain. 2. Stir in remaining ingredients. Heat to boiling, then reduce heat. 3. Cover and simmer, stirring occasionally, until lentils are tender - about 40 minutes. |
