A galette is a rustic pie, made by filling a pie crust with a meat mixture, then just folding over the edges. Simple, but delicious! Ingredients:
2 tbsp butter |
1 onion, chopped |
1 red bell pepper, chopped |
1 cup cremini mushrooms |
1 lb sliced deli roast beef |
1 cup part-skim ricotta cheese |
1 tbsp flour |
salt & pepper to taste |
1 tsp dried marjoram leaves |
1 cup shredded low fat swiss cheese |
1 unbaked whole wheat pie crust |
3 tbsp grated romano cheese |
Directions:
1. Preheat oven to 375*F 2. In large saucepan, melt butter over medium heat. 3. Add onion, red bell pepper, and mushrooms. 4. Cook & stir until veggies are tender & liquid evaporates. 5. This should take between 10 to 11 minutes. 6. Remove from heat & place in large bowl. 7. Add beef, ricotta cheese, flour, salt, pepper, marjoram & Swiss cheese. 8. Mix gently. 9. Roll out pie crust to a 12 inch circle; place on cookie sheet. 10. Place beef mixture in center of pie dough, leaving a 2 inch border. 11. Gently fold the pie dough edges over the beef mixture, leaving a 4 inch open space in the center. 12. Sprinkle with Romano cheese. 13. Bake for 20 – 35 minutes, or until the crust is golden brown, and its filling is bubbling. 14. Let it stand for 10 minutes, then slice to serve. |
