i love this skirt steak marinade it makes the fajitas juicy and tasty Ingredients:
1 can 10 oz rotell diced tomatoes and green chilies |
1 cup budweiser |
1/4 cup lemon juice |
3 tbl. veg oil |
2 cloves garlic minced |
1/8 teas. blk pepper |
1-2 lbs skirt steak trim excess fat |
2 medium onions sliced 1/4 thick |
2 medium bell peppers sliced 1/4 thick |
pam no stick spray |
10 8 flour tortillas |
1 cup 4 oz shredded cheddar cheese |
1/2 cup sour cream |
1 cup guacamole |
1/2 cup taco sauce |
Directions:
1. in a 9x12x2 baking dish, combine rotell,beer,lemon juice,oil,garlic,pepper, place meat in dish 2. add the onions and bell peppers cover and refrigerate over nite 3. or no less than 6 hours 4. remove from marinade 5. broil 3 from the heat source for 8 minutes 6. pull out, baste in marinade and put back in for 7 minutes the other side medium doneness 7. slice the beef across the grain inti thin strips 8. spray the skillet and saute the veggies till tender 9. for a fajita on tortillas layer meat,onions,peppers,cheese,sour cream,guacamole and taco sauce roll to close makes 10 |
