2 tablespoons olive oil |
1 lb boneless sirloin steak, thinly sliced |
1 cup red bell pepper, strips |
1 cup onion, chopped |
2 teaspoons garlic, minced |
1 teaspoon fresh oregano, chopped |
1/2 teaspoon chili powder |
1/2 teaspoon salt |
1/4 teaspoon black pepper |
1 cup tortilla chips, broken |
queso fresco, crumbled |
salsa |
fresh cilantro |
sour cream |
guacamole |
Directions:
1. In a large nonstick skillet, heat 1 tablespoon olive oil over high heat. Quickly sear sirloin steak until rare, 1 - 2 minutes; remove from skillet. 2. Heat 1 tablespoon oil in the pan. Add red bell pepper strips, onion, and garlic; stir-fry until just soft, about 3 minutes. Season with oregano, chili powder, salt, and pepper. 3. Return the meat to the pan along with broken tortilla chips and crumbled queso fresco. Toss until the chips are well coated. Serve with salsa, fresh cilantro, sour cream, and guacamole. |
