This is a recipe we used for years. We've modified it a few times and it gets a little better each time. It can be made ahead and frozen. Ingredients:
1 lb lean ground beef |
1 (16 ounce) can refried beans |
2 (4 ounce) cans green chilies, drained |
1 large onion, chopped |
2 garlic cloves, minced |
1/2 teaspoon salt |
1/8 teaspoon pepper |
1/2 teaspoon oregano leaves |
2 1/2 cups sharp cheddar cheese, grated |
3 teaspoons green onions, chopped |
1 (19 ounce) can enchilada sauce |
8 flour tortillas, 8 inch |

Directions:
1. Cook ground beef, salt, pepper, green chilies, onion, and garlic over medium heat until beef is browned and onion is tender. Drain well. Fold in refried beans. 2. Preheat oven to 350 degrees. 3. Pour 1/2 of enchilada sauce into a lightly greased 9x13 baking dish; sprinkle with oregano. Spoon 3-4 T of beef and bean mixture onto each tortilla, top with 2 T cheese. Roll up and place seam side down in sauce. 4. Top tortillas with remaining enchilada sauce and cheese. Bake for 30 minutes. Garnish with green onions and sourc cream. 5. Serves 4-6. |
