From my church cookbook Heavenly Concoctions , FUMC Alvarado. This is a lot like Taco Soup, only not as spicy and not as thick. If you can not find Fiesta Soup you can use a small can of beef consome soup and a can of chili with beans. Ingredients:
1 1/2 lbs ground beef |
1 onion, medium chopped |
1 bell pepper, chopped |
1 (10 1/2 ounce) can beef consomme soup or 1 (10 1/2 ounce) can fiesta chili beef soup |
1 (10 1/2 ounce) can water |
1 (10 1/2 ounce) can cheddar cheese soup |
1 (10 1/2 ounce) can water |
1 (15 ounce) can pinto beans |
1 (15 ounce) can whole kernel corn, drained |
Directions:
1. Brown together ground meat, onion and bell pepper. Drain off excess liquid. 2. Then add remaining ingredients and stir well. 3. Simmer one hour - stirring occasionally to prevent sticking or scorching. 4. Good with corn bread on a winter night. |
