Beef Chop Suey Ingredients:
5 tbsp soy sauce |
2 tbsp cornstarch |
1 1/4 lb sirloin, well trimmed |
2 tbsp vegetable oil |
4 stalks celery, with leaves, sliced diagonally into 1/2 inch pieces |
12 scallions, sliced diagonally into 1 inch pieces |
10 oz button mushrooms |
8 oz water chestnuts, rinsed and drained |
1/2 tsp salt |
1/4 tsp pepper |
12 oz bean sprouts or finely shredded cabbage |
Directions:
1. In a measuring cup, stir the soy sauce into the cornstarch. Set aside. 2. Cut steak lengthwise (with the grain) into 3 inch wide strips, then slice crosswise. 3. In a large work or Dutch oven, heat the oil over high heat. Add the beef and cook until just starting to brown, but still pink, about 1 minute. 4. Reduce heat to medium high and add celery, scallions, water chestnuts, mushrooms, salt and pepper. Stir to combine. Cover and cook until mushrooms have softened, about 5 minutes. 5. Sprinkle bean sprouts over mixture. Restir soy mixture. Add to pan. Cook uncovered until sauce thickens, about 1 minute. |
