Beef Chop Suey

Ingredients:
250 g beef, cut into small cubes
1 medium carrot, sliced lengthwise
10 french beans, sliced lengthwise
2 medium onions
4 green chilies
1 teaspoon ginger paste
1 teaspoon garlic paste
5 garlic cloves, chopped
4 dried red chilies
3 teaspoons soya sauce
1 teaspoon chili sauce
3 teaspoons tomato sauce
1/3 teaspoon ajinomoto
1/2 teaspoon white pepper powder
3/4 teaspoon white vinegar
2 teaspoons cornflour, dissolved in
water
salt
oil, as required
2 tablespoons lime juice
1/2 teaspoon white pepper powder
salt
Directions:
1. Marinate beef cubes with lemon juice, pepper powder and salt for 30 minutes.
2. Pressure cook the beef till it is tender.
3. Soak the red chillies in 1/3 cup hot water and vinegar.
4. Grind to a paste.
5. Boil carots and beans till they are crunchy.
6. Do not discard the stock.
7. Heat oil in a wok.
8. Stir in ginger and garlic pastes.
9. Saute till the raw smell leaves the wok.
10. Add the chopped green chillies, dried red chilli paste, chopped garlic and diced onion to the wok.
11. Saute continuously for 5-7 minutes.
12. Add a little stock so as to not let the mixture stick to the bottom of the wok.
13. Saute till the onion is crunchy.
14. Add soya sauce and chilli sauce, tomato sauce, boiled carrots and beans, salt and the cooked beef.
15. Cook on medium heat for 10 minutes.
16. Add 1/2 cup stock, cornflour-water mixture, pepper powder and ajinomoto.
17. Stir till the dish has medium gravy consistency.
18. Serve with fried rice or noodles.
