A delicious recipe for those cold nights! It can also be made in a dutch oven on stove top; just simmer for 1 hour. Ingredients:
1 1/2-2 lbs beef chuck, cut in 1-inch cubes |
6 italian sausages (about 1 lb) |
1 large onion, sliced |
2 garlic cloves, minced |
2 medium green peppers, seeded, cut into chunks |
4 medium potatoes, pelled, cut into quarters |
2 (1 lb) cans red kidney beans, drained |
1 teaspoon basil |
1/2 teaspoon salt |
1/4 teaspoon pepper |
1 cup beef broth |
Directions:
1. In heavy skillet brown sausages well; cut into brite-size pieces and set aside. 2. Brown beef in same silled in about 2 tbsp of sausage fat. Add onion and garlic. Season with basil, salt and pepper. 3. Cover and simmer 1 hour or until meat is almost tender. 4. In 3-quart covered casserole, combine all ingredients. Cover and bake at 350 F for 1 hour and 15 minutes, or until potatoes are tender. |
