A unique, savory casserole that is definitely a comfort food. Easy to make, the light, creamy tomato sauce provides a creative twist on familiar ingredients. First made it over 30 years ago. I haven't a clue now where it came from, but it's well worth a try. Ingredients:
1 lb ground beef |
1/4 cup chopped onion |
1 (10 3/4 ounce) can tomato soup |
1 (8 ounce) can stewed tomatoes |
1 cup sour cream |
4 ounces cream cheese |
5 ounces mafalda noodles, cooked according to pkg. directions. (thick lasagna noodles) |
salt, to taste |
pepper, to taste |
garlic powder |
Directions:
1. Brown beef and onion in large skillet. If necessary, drain when browned. 2. Stir in stewed tomatoes, soup, and seasonings. Simmer 5-10 minutes. 3. Stir in sour cream and cream cheese. Add cooked mafalda noodles. 4. Turn into 2-quart casserole and bake at 350 degrees for 30-35 minutes. |
