Hearty stir-fry made with lean beef & vegetables. Ingredients:
1/2 lb lean beef, browned |
4 tbsp soy sauce |
1/2 cup beef broth |
2 1/2 tsp cornstarch |
1/2 tsp ginger, grated |
2 cups broccoli, chopped |
1/2 red pepper, thinly sliced |
1 med. onion, thinly sliced |
1 tbsp oil |
Directions:
1. Slice beef thinly across the grain. Marinate in 1 tbsp. soy sauce while getting everything else ready. 2. Mix together broth, soy sauce, cornstarch & ginger. Heat oil over med high, add vegetables, cook 3-4 minutes stirring constantly. Remove. 3. Add beef, stir fry 3-5 minutes. Push to edge of pan. Stir sauce mixture, pour into pan, cook until thick and bubbly. Return veggies to pan, coat well & heat through. |
