Easy, filling beef & barley soup with vegetables. Ingredients:
1/2 cup barley |
2 carrots |
2 stalks celery |
1/2 cup onion |
2 cloves garlic |
8 oz mushrooms |
2 beef bouillon cubes |
1 t canola oil |
4 oz stew beef |
Directions:
1. Heat oil in a dutch oven or saucepan; add chopped carrot, celery, onion, garlic, and mushrooms to oil. Cook for 8-10 minutes. 2. Add beef, barley, and bouillon cubes, dissolved in 4 cups of water. 3. Bring to a boil, then cover and reduce heat and simmer for 45-50 minutes, or until barley is cooked. |
