Easy, filling beef & barley soup with vegetables.
Ingredients:
1/2 cup barley
2 carrots
2 stalks celery
1/2 cup onion
2 cloves garlic
8 oz mushrooms
2 beef bouillon cubes
1 t canola oil
4 oz stew beef
Directions:
1. Heat oil in a dutch oven or saucepan; add chopped carrot, celery, onion, garlic, and mushrooms to oil. Cook for 8-10 minutes.
2. Add beef, barley, and bouillon cubes, dissolved in 4 cups of water.
3. Bring to a boil, then cover and reduce heat and simmer for 45-50 minutes, or until barley is cooked.
