A hearty soup that everyone will love. Serve with bread and you have a meal. Ingredients:
2 lbs stewing beef |
1 (11 ounce) box quick-cooking barley |
1/2 lb carrot, sliced |
1 large onion, diced |
salt |
pepper |
2 teaspoons dill weed |
2 (14 ounce) cans diced tomatoes |
8 cups beef stock |
Directions:
1. Brown beef in large pot. Add tomatoes and beef stock. Simmer 2-3 hours until beef is tender. Add onion, Carrot, seasonings and simmer 30 minutes until vegetables are tender. Add barley and simmer additional 15 minutes. Stock or water may be added if soup is too thick. |
