A very hearty soup that makes a great warm supper at the end of a cold day. If you want a lighter fare, try substituting ground chicken or turkey. If you are not abig fan of lentils and split peas, use 3/4 of barley only. Ingredients:
3 1/2 cups water |
3/4 cup tomato sauce |
3/4 cup dried soup mix (mix of lentils, barley, split peas) |
1 beef bouillon cube |
1 carrot, diced |
1 potato, diced |
1 celery, chopped |
2 teaspoons dried basil |
1/2 teaspoon salt |
1/4 teaspoon black pepper |
1 lb cooked lean beef |
Directions:
1. In a large stockpot, combine water, tomato sauce, dried soup mix, bouillon cube, carrot, potato, celery and seasonings; bring to a boil. Reduce heat and simmer, covered for about 1 hout. Add beef. Cook for 30 minutes longer. |
