Beef Barley Soup

A very hearty soup that makes a great warm supper at the end of a cold day. If you want a lighter fare, try substituting ground chicken or turkey. If you are not abig fan of lentils and split peas, use 3/4 of barley only.
Ingredients:
3 1/2 cups water
3/4 cup tomato sauce
3/4 cup dried soup mix (mix of lentils, barley, split peas)
1 beef bouillon cube
1 carrot, diced
1 potato, diced
1 celery, chopped
2 teaspoons dried basil
1/2 teaspoon salt
1/4 teaspoon black pepper
1 lb cooked lean beef
Directions:
1. In a large stockpot, combine water, tomato sauce, dried soup mix, bouillon cube, carrot, potato, celery and seasonings; bring to a boil. Reduce heat and simmer, covered for about 1 hout. Add beef. Cook for 30 minutes longer.
