Beef-and-Onion Cornbread Pie |

Ingredients:
1 pound ground beef |
1 large onion, chopped |
1/2 green bell pepper, chopped |
1 (11-ounce) can corn kernels, drained |
1 (10 3/4-ounce) can tomato soup |
1 cup water |
1 tablespoon chili powder |
1 teaspoon salt |
3/4 teaspoon pepper |
cornbread topping |
garnishes: shredded cheddar cheese, sour cream, cilantro sprigs |
Directions:
1. Cook first 3 ingredients in a large skillet over medium-high heat, stirring until beef crumbles and is no longer pink; drain. Stir in corn and next 5 ingredients. Reduce heat and simmer 15 minutes. 2. Pour beef mixture into a lightly greased 2-quart baking dish. Spread Cornbread Topping over beef mixture. 3. Bake at 425° for 18 to 20 minutes or until golden. Garnish, if desired. |
