Beef and Cheese Manicotti |

Convenient. A favorite. Slightly time-consuming, but well worth it. Ingredients:
1 pound ground beef |
1/2 cup chopped onion |
2 garlic cloves, small, minced |
1 cup cottage cheese, 2% low fat, drained |
1/4 cup parmesan cheese, grated |
1 egg |
2 tbsp. parsley |
8 oz. pasta shells, packaged manicotti |
15 oz. tomato sauce, can of herbed |
1/2 cup cheddar cheese, shredded |
1/4 cup parsley, snipped |
Directions:
1. For filling, in a 10-inch skillet, cook beef, onion and garlic until beef is brown and onion is tender. Drain off fat. 2. Stir in cottage cheese, parmesan cheese, eggs and 2 Tbsp. snipped parsley. Set aside. 3. Cook pasta in boiling salted water until firm yet tender - about 18 minutes. Drain. Rinse with cold water. Drain again. 4. Spoon about 1/3 cup of filling into each shell. 5. Arrange stuffed manicotti in 12 x 7-12 x 2 inch baking dish. 6. Pour tomato herb sauce over top. Cover with foil. bake in 350 degree oven for 35 minutes or until heated through. 7. Sprinkle with cheddar cheese and garnish with additional parsley. |
