Beef and Black Bean Burritos |

These are great in the summer. The salsa (recipe provided) is so refreshing, we usually picnic with these-even the kiddies really enjoy! *please note* prep time includes marinate time! Ingredients:
1 lb beef round steak |
16 ounces black beans, canned |
4 large tomatoes |
1/2 cup onion |
4 ounces green chilies |
3 tablespoons cilantro |
1 garlic clove |
1/2 teaspoon cumin |
1/2 teaspoon chili powder |
1/2 teaspoon oregano |
1/2 teaspoon sage |
1/2 teaspoon cayenne pepper |
Directions:
1. Thinly slice the beef round, then cube into 1/4 inch cubes. 2. Rinse and drain the black beans. 3. Prepare the salsa fresca by blending the remaining ingredients in a food processor. 4. Take 1/4 of the salsa fresca and mix it with the cubed meat. 5. Take 1/4 of the salsa fresca and mix it with the black beans. 6. Allow the meat and beans to marinate for 45 minutes. 7. Cook the meat in a skillet over a high heat, until the meat is no longer pink and all the liquid has evaporated. 8. Microwave the beans for 1 minute on high, or until hot. 9. Serve with warm tortillas. |
