Beef and Black Bean Alfredo Baked Potato Topping |

Our kids love this. Ingredients:
1 large onion |
3 garlic cloves |
1/2 lb ground beef |
1 (15 ounce) can black beans |
2 cups broccoli florets |
16 ounces light alfredo sauce |
1/2 cup skim milk |
1/2 teaspoon black pepper |
1/4 teaspoon crushed red pepper flakes |
1 1/2 teaspoons curry |
Directions:
1. Dice onion and mince garlic. 2. Fry ground beef; drain. 3. Add onion and garlic and sauté until soft. 4. Add black beans and broccoli florets and a tablespoon of water. Steam for a minute or two. 5. Add spices, Alfredo sauce and milk until it is the desired consistency. 6. Continue cooking on medium heat until thoroughly heated. 7. Serve over baked potatoes. It is also good over noodles or rice. |
