An old standby for a quick lunch. Pick your own heat for the green chilis. Easy on the budget. Ingredients:
1/2 lb beef round steak, cut into 1 in. strips |
2 teaspoons minced garlic |
1 (15 ounce) can pinto beans, drained and slightly mashed |
1 (4 ounce) can diced green chilies, drained |
1 teaspoon cilantro |
6 flour tortillas |
1 cup grated cheddar cheese |
Directions:
1. Spray nonstick skillet with cooking spray. 2. Heat over med. heat. 3. Add steak and garlic. 4. Cook until desired doneness (about 5 minutes). 5. Stir in beans, chilis, and cilantro. 6. Cook and stir 7 minutes. 7. Spoon mixture on tortillas. 8. Top with cheese. 9. Fold bottom up, fold sides over. 10. Garnish with salsa, sour cream. |
