Grandmas long lost Danish Carrot Soup Ingredients:
1 tablespoon extra virgin olive oil |
2 cups chopped vidalia onion |
2 pounds carrots, cut into 1/2 inch pieces |
1 teaspoon fine sea salt |
1/2 teaspoon fresh ground pepper (black) |
quick sprinkle of ground ginger |
2 cups water |
2 cups chicken broth (homemade is best) |
2 tablespoons heavy cream, divided |
Directions:
1. 1) Heat oil in a large pot over medium heat. Add chopped onion and carrots to pan. Cook 10 minutes, stirring frequently, add salt, pepper and ginger. 2. 2) Add 2 cups water and broth to pan, bring to a boil. Cover and reduce heat. Let simmer for about 25 min until carrots are tender. Remove from heat and let cool. 3. Place half of carrots and 1 tablespoon cream in food processor, blender or use stick blender. Process or blend for 20 seconds or until smooth. Pour pureed mixture into a large bowl. Repeat procedure with remaining carrot mixture to pan. Cook over medium heat until thoroughly heated. 4. 3) Serve-Eat-And Enjoy |
