This is an unusual way to prepare bacon for brunch/breakfast. From The Blue Ribbon Country Cookbook. Ingredients:
12 slices thick bacon (1/2 to 3/4 pound) |
1 extra-large egg |
1 teaspoon prepared mustard |
1/4 teaspoon pepper |
1 teaspoon cider vinegar |
3/4 cup commercial cracker meal |
Directions:
1. Cut the bacon slices in half widthwise; set aside. 2. In a small mixing bowl, place the egg, mustard, cayenne pepper, and vinegar; using an electric mixer, beat on medium speed until blended and smooth. Pour the egg mixture into a pie pan; set aside. 3. Sprinkle the cracker meal over a 1-foot-square piece of waxed paper; set aside. 4. Dip the bacon pieces in the egg mixture; then, dredge lightly in the cracker meal and place, single layer, on ungreased broiler racks over broiler pans. Let stand 15 minutes. 5. Bake the bacon in a preheated oven for 18 to 20 minutes. Watch carefully during the last few minutes of baking, as the bacon can overbrown quickly at the end of the baking period. |
