This Wild Rice Soup is thick, hearty and perfect for a cool fall or winter day. You don't need to pre-cook the wild rice, so it's quick and easy. It will surely be a family favorite! Ingredients:
2 tablespoons butter |
1 cup celery, chopped |
1 cup carrot, chopped |
1 onion, diced |
1 tablespoon minced garlic |
4 cups chicken broth |
10 ounces cream of chicken soup |
10 ounces cream of mushroom soup |
1 cup wild rice (uncooked) |
1/4 cup sliced almonds |
3/4 cup milk |
1 tablespoon parsley |
1 teaspoon dried oregano |
pepper, to taste |
Directions:
1. In a large stockpot, melt butter. 2. Add celery, carrots, onion & garlic. Saute. 3. Stir in chicken broth, cream of chicken & cream of mushroom soup. 4. Sprinkle in parsley, oregano & pepper. 5. Add wild rice and sliced almonds. 6. Bring to a boil. 7. Reduce heat, simmer for 20 minutes. 8. Add milk and simmer for another 20 minutes. 9. Stir occasionally, to prevent rice from sticking to the pot. |
