My Mom taught me to make these. These potatoes are really simple and fast to make but they look great, the colour of the paprika is fabulous Ingredients:
4 to 6 potatoes (depending on size) |
1-2 tbsp butter |
1-2 tbsp oil |
1 tbsp sweet hungarian paprika or combination of sweet and hot paprika |
salt to taste |
Directions:
1. Peel the potatoes and cut them into around 1 cubes; place them in a sauce pan with cold water to cover and about 1tsp. salt. Cook them till tender and then drain. Meanwhile melt butter and oil together and turn the heat very low and add the paprika to it. Cook for just a minute or two but be very careful not to burn the paprika or else it gets bitter and you have to throw it away and start over. Add the cooked potatoes to the pan and gently stir to cover with the sauce. Serve immediately |
