Beautiful soup that is delicious and good for you!
Ingredients:
3 medium beets, peeled and chopped into chunks
1 tbsp olive oil
1 cup onion, chopped
1 lb carrots, chopped
1 tbsp minced fresh ginger (or more!)
1 clove garlic, minced
6 cups water or vegetable stock (if using water, you may need to add a bit more salt)
1 tsp grated orange rind
3/4 tsp salt (or more, to taste)
freshly ground black pepper
4 dollops of fat free plain yogurt for garnish
Directions:
1. In stock pot over med high heat oil and saute onion until translucent. Add carrots, ginger, and garlic. Cook for 5 mins, stirring frequently.
2. Add beets and water or (stock). Simmer soup, covered for 50 mins.
3. Add orange rind and stir well.
4. In food processor or blender, puree soup in batches (I like to leave mine a tad chunky, not totally liquid). Transfer pureed soup back to pot or into a large bowl. Stir in salt and pepper.
5. Taste soup and adjust seasonings.
6. Serve soup hot or chilled, garnished with dollops of yogurt.
7. Enjoy!
