This is a fantastically good pasta dish that I'm sure you will enjoy - I know I did!! It so tasty, and just pasta, eggs, cheese and veggies - very good!! If you make your own Vegetable Seasoning, Make sure the measurments are heaping . Ingredients:
6 eggs |
1 1/2 cups light ricotta cheese |
1 teaspoon vegetable seasoning (or mix your own, 1/4 tsp each dried basil, thyme and oregano) |
1 teaspoon dry mustard |
1/2 teaspoon onion powder |
fresh ground pepper |
2 cups dry rotini pasta |
2 cups cooked chopped assorted fresh vegetables (broccoli, carrots, peas, green beans) |
1/2 cup shredded low-fat cheddar cheese |
fresh basil leaf (optional) |
Directions:
1. Whisk eggs with ricotta cheese, Vegetable seasoning, dry mustard and onion powder; season with pepper. Set aside. 2. Cook pasta in a medium saucepan for 10 minutes or according to package directions. Drain well. 3. Return pasta to saucepan over medium-low heat. 4. Add egg mixture and vegetables. 5. Stir constantly for about 4 minutes or until mixture thickens slightly. 6. Remove from heat. 7. Add cheese and stir until melted. 8. Garnish with basil leaves. |
